Mutton malai - Recipe

Mutton ½ kg
Salt 1 tsp, heaped
Yogurt 1 cup
Coriander powder 1 3/4 tsp
Garam masala 1 1/4 tsp, levelled
Lemon juice/vinegar 3 tbsp
Cumin 1 1/2 tsp heaped (roasted and crushed)
Chili powder 1 3/4 tsp, level
Goldened onion 6 tbsp
Kewra water 2 tbsp
Saffron ¼ tsp
Ginger garlic paste 1 tbsp
Green cardamom powder ¼ tsp
Cashew nuts 3 tbsp (ground)
Malai 4 tbsp
Mint leaves 10, chopped
Oil 1 tbsp, or as required


Marinate meat with salt, yogurt, coriander powder, garam masala, lemon juice, cumin, chili powder, half the goldened onion, ginger garlic paste and green cardamom powder, leave to marinate for at least 1 hour.

Heat oil add marinated mutton, cover and simmer on low flame for 30 minutes.

Add in cashew nuts paste mixed with malai, kewra water, saffron, cardamom powder, the rest of the onions, and mint leaves.

Leave it on simmer till oil floats to top.
